Skillet Chicken with Herb Sauce and Polenta



And so begins my "Magazine Meal Plan Week". Tonight's dinner was tasty, but Tarragon is an acquired taste and it took me a few bites to really get into it. My son wanted nothing to do with it, but my husband really enjoyed it. I pounded the chicken so it would cook faster and I added a little flour to the sauce to thicken it. Overall it was good, but it's not a meal that tops my list of yummy chicken meals, so it may end up at the bottom of the pile again.
